Makes 6 Ingredients: 6 x Eggs 2 x Cherry tomatoes 1 x Green pepper 1 x Handful of spinach 1 x Teaspoon of curry powder (optional but tastes great) 1 x tablespoon of olive oil Instructions: Preheat the oven to 180 degrees. Crack the eggs into a mixing bowl big enough to hold all the ingredients. Whisk the eggs. Season with salt and pepper. Chop up the vegetables and add them to the whisked eggs. Add the curry powder to the mixture. (optional) Grease a muffin tin with a touch of olive oil. Carefully share the mixture evenly between the 6 muffin holders. Bake for 20 mins. Serve OR store in an airtight container in the refrigerator for up to 4 days and reheat when ready to serve. Enjoy 1 as a snack between meals or 2-3 as part of a meal. Any questions get in touch. Nikki had joined her parents on a couple of Personal Training sessions before taking up a FREE Trial on our Monday night Small Group Training class. Nikki started to get the fitness bug again and without any real attention to her diet, had lost around 7kg. This was a great starting place for Nikki. In March of 2018, she decided to take it to the next level and book her very own Personal Training sessions to support her Small Group Training, which she was now attending twice a week. From March to November Nikki lost a further 19kg, making a whopping total of 27.7kg weight loss. That's 4.5 stone or 61lbs. Weight loss has not been the only benefit of Nikki's journey. Nikki's knocked 8 minutes off her Park Run time and can now run 10km comfortably, without knee pain. Nikki feels more comfortable in her clothes which has increased her confidence in and out of work. Nikki now enjoys joining her friends on weekend activities like Go Ape, which previously she would have been very apprehensive about. Nikki has enjoyed learning more about how her body works and what she needs to do each week to get the results she desires. Nikki feels happier and more confident than ever. She is about to resume Fencing, a sport she previously loved but had been put off due to her weight. Nikki is also the same weight now that she was 7 years ago. The latest statistics from 2016 on obesity and overweight population rates show that 58% of women and 68% of men in the UK are either obese or overweight. On the other hand, 26% of adults were classed as inactive, that means they do less than 30 minutes of physical activity per week. There are many celebrity trainers and fitness figures who offer a variety of short and medium-term fitness programs you can join.
